“Nothing ever seems impossible in Spring”.
My garden now has a row of radishes as well as broccoli, kale, green onions and carrots. The oregano and chives from last year have returned and the lavender is sprouting tiny flower buds; The rosemary is dressed in blue flowers, even the sage is blossoming. Spring has finally arrived on the coast.

Springtime in the kitchen holds the energy of renewal. At home, we transition from the carb-rich recipes of Fall and Winter and the focus turns to fresh vegetables; Asparagus and Spinach and overnight oats with berries for breakfast.
I love making overnight oats especially on work days. Just prep the night before then add your toppings in the morning and go!
Easy Overnight Oats Recipe
The base is (for 1 serving) :
1/2 a cup of rolled oats
1/2 a cup of almond milk (or any milk you prefer)
1/4 cup of yogurt (I use natural vanilla flavoured)
1 Tablespoon of Chia Seeds
1 Tablespoon of Maple Syrup
Place all of your ingredients in a glass jar and stir. Place in the fridge overnight then top with your favourite fruit in the morning. I especially like mine with Raspberries, Strawberries, Blueberries, a dollop of nut butter and shredded coconut.
Other topping can be:
chocolate chips
sliced pineapple
chopped walnuts
sliced banana
After the heavier food and hibernation of Winter, I feel the need for a cleansing detox (For a detox inspired by the ocean HERE). Dry skin from indoor heating is easily sloughed away with a homemade body scrub. One of my favourites to make is this coffee sugar scrub. I can’t drink coffee (because it’s bad for my anxiety) but I love the scent. I take this scrub into the shower and it leaves my skin so smooth; it’s great before self tanning too because it’s not oil based.
Coffee Sugar Body Scrub
You Will Need
- a bowl and a spoon to mix
- an empty wide-mouth container with a lid
- 2 Tablespoons of Coffee Vanilla Body Wash/Shampoo (or any body wash you like)
- 1 cup of brown sugar
- 1 Tablespoon of ground coffee.
Directions
- measure the body wash, into a bowl
- Add the sugar and mix it
- the mixture should be thick like ice cream, if not add more sugar
- mix in the coffee
- transfer the sugar coffee scrub into a wide mouth container
- it’s now ready to use (and is the prefect morning pick me up if you love coffee)
What do you do to usher Spring into your home? We took a long walk in the woods today and for the first time it was warm enough to not need a jacket. The sunshine trickling through the forest canopy felt warm and inviting on our skin. Something about Spring makes me feel hopeful for what’s to come; camping in the mountains, misty beach hikes on Vancouver Island and evening BBQ’s on the patio.
