You will Need: (Serves 4)
Cherry tomatoes quartered (2 packages) or roma tomatoes chopped.
1 block of Feta Cheese
Pasta (I used Rigatoni)
Salt & Pepper
Chopped garlic (3-4 cloves)
Fresh Basil leaves torn (I used 6 from my garden)
Preheat your oven to 400 celsius.
Add the tomatoes and chopped garlic to a pan and drizzle with Olive oil. Mix to coat. Sprinkle with Salt and Pepper.
Add the block of Feta Cheese to the centre of the pan drizzle with olive oil and sprinkle everything generously with smoked paprika and garlic power. If you like spice, you can sprinkle the top of the cheese with chilli flakes.
Boil water in a pot and cook your pasta. Strain, butter and set aside.
Bake the tomatoes and feta for 30 minutes then raise the heat to 450 and cook for an extra 10 minutes.
Once the tomatoes and cheese are baked, pull the pan out of the oven and pour cooked pasta overtop. Tear up the basil leaves adding them to the pasta and giving everything a good stir. Taste and add extra salt or spices to taste. Serve immediately.
