I love using Cabbage raw in salads and stirfries but did you know that fermented Cabbage a.k.a Sauerkraut has many probiotics benefits as well as containing high doses of Vitamins, Cancer killing and immune boosting properties?. Sauerkraut is super easy to make and can be eaten alone or as a topping with other meals.
I used this rainy afternoon to make some natural cleaning products and decided to use up the cabbage in the fridge and made a quart or Sauerkraut.
You will need: 1 large head of cabbage should make 3 jars.
1-3 clean Mason Jars
1 head of Green Cabbage
1 tsp coarse salt
1 tsp white sugar
1tsp white vingar
Boiling water
Make sure your jar(s) is sterilized but placing it in a pot with boiling water for a few minutes. Let your jar cool before using.
Chop the Cabbage finely and pack it tight into the jar.
Add a tsp each of salt, sugar and vinegar and top up with boiling water (just to the neck of the jar).
Seal tightly and store in a cool dark pantry. It will be ready to eat in 1 month.
