Wind Warning

Northwest winds of 70 km/h gusting to 90 expected near the water late today.
An intense Pacific cold front will move across the south coast this afternoon. Strong southerly winds this morning will shift to strong northwest this afternoon in the wake of the front. Northwest winds are expected to reach 70 km/h gusting to 90 near the water by this evening.
After a mostly sunny day, the skies took on a menacing turn and within minutes strong winds and rain pounding the windows; time to light candles and wait out the storm with a book. Welcome to Springtime on the Pacific Coast.
It’s Sunday. I’m thinking a little trip to Italy for dinner: Sandwiches with Ricotta and Salami. They’ll be wonderful, warm and toasted with a salad. Comfort food to eat cozied on the couch while watching a movie.

I intended to use Focaccia for the sandwiches but had no luck at both bakeries close to home. Instead I found an Asiago Ciabatta loaf. It will do just fine. I’ll toast it and drizzle it with olive oil for a light crunch.
You Will Need:
Bread of your choice – Focaccia, Ciabatta, Panini
Olive Oil
Ricotta Cheese
Salami & Prosciutto Ham
Vine Tomatoes (I found beautiful yellow ones)
Leaves for crunch ( Romaine Hearts or fresh Radicchio) whole.
Lemon Zest
1 small Red Onion thinly sliced and sauteed in Olive oil until lightly caramelized

Instructions:
Slice bread through the middle and lightly toast.

Drizzle toasted bread with Olive Oil and spread Ricotta Cheese over top.
Add Salami & Prosciutto to taste and using a grater add lemon zest
Top with sauteed red onion and vine tomatoes

Add Lettuce or Radicchio and top with bread.
Serve immediately.

For the Salad I added Lettuce, red vine tomatoes, chopped red onion, chopped artichoke hearts, sliced sun dried tomatoes (in oil), sliced avocado, lemon juice, coarse salt and Italian dressing. Toss together and you’re done!
