Saturday night at home. After a day of rain and grey skies a cozy movie night was in order. We decided on the movie Yesterday and enjoyed some comfort food to go with it. This vegan version of sloppy joes will not disappoint. I didn’t really remember what the original ones are supposed to taste like because the last time I tried them was probably in 1985. My husband says he does remember and that this recipe is a pretty good alternative.
20 Minutes Vegan Sloppy Joes
Ingredients
- 1 tbsp cooking oil of your choice
- 1 medium onion chopped
- 1 pack of vegan ground round (tempeh or soy based crumble will also do)
- 1 large can of lentils (drained)
- 1 Tbsp chilli powder
- 1 tsp garlic powder
- 1 tsp mustard powder
- 1/2 tsp dried oregano
- 1/4 tsp salt
- 1/4 tsp pepper (I use white)
- 4 Tbsp of tomato paste
- 1 cup if vegetable stock
- 1 1/2 tsp of balsamic vinegar
- Fresh buns (I bought Calabrese buns)
- Vegan cheese (optional) or regular cheese (for vegetarian) shredded
**If you like spicy food you could add 1/4 tsp of cayenne pepper or hot chilli peppers to the mix.

Instructions

In a large pan over medium heat, add your cooking oil. Cook the onion for about 3 to 5 minutes until translucent.

Now add the ground round, break it up with a wooden spoon and cook for another 3 to 5 minutes.

Add the canned lentils and stir to combine followed by the chilli powder, garlic powder, mustard powder, oregano, salt, pepper and tomato paste. Stir well to combine. Cook 2-3 minutes.

Stir in the vegetable stock and simmer for a few minutes until you’ve reached your desired consistency (add more if you like your sloppy joes more “sloppy”).

Stir in the balsamic vinegar.

Gently toast the buns in the oven broiler (or toaster oven) and serve immediately topped with Sloppy Joes. Garnish with cheese if desired and enjoy!
