Summer Salads in Minutes

These are two salads we like to make at home during the Summer months.  When it’s warm out, we don’t want to spend hours in the kitchen when we can be enjoying the sun or a drink on the patio.  These salads are also great fresh sides for any BBQ; fish, steak, chicken, even burgers.

The first is a watermelon salad and the second, a beet, carrot and apple salad.  I hope you’ll try and love them as much as we do.

 

WATERMELON SALAD WITH FETA 

You will need: (serves 6)

1 small watermelon

chopped fresh basil

Feta cheese crumbled to taste

In a small bowl mix 2 TBlsp olive oil, salt and pepper to taste

To Make:

Chopp Watermelon into bite sized cubes

Add crumbled feta cheese (as much as you wish) and basil.  Keep chilled in fridge until serving.

Before serving, add dressing of olive oil, salt and pepper.

SHREDDED BEET SALAD

You will need: (serves 4-6)

1 large raw beet washed and peeled

2 carrots

2 apples peeled and cored

2-3 Tblsp Olive oil

Juice of 1 lemon

Zest of one lemon

salt and pepper

In a large bowl (you’ll need room to mix this salad) grate the beet, carrots and apples. Add the lemon zest and lemon juice. Add Olive oil, salt and pepper and mix.  This
