Monday Night Pizza Party

As much as I love to cook, there’s always a day in the week where either because of life getting in the way or just plain feeling tired, neither myself nor my boyfriend want to spend too much time cooking.  These are the days for which I keep “fast food” in the fridge.  It could be a whole roast chicken that I can quickly rub with herbs and put in the oven or mini pizzas like tonight.

During my grocery shopping trip last week, I found these mini thin pizza crusts by Mama Mary’s at Safeway.  Now, pizza isn’t usually something you’d think of eating when you’re trying to lose weight (I’m on day 51 of MyfitnessPal program and have lost 14lbs)  but at 110 calories per pizza crust, adding some spinach, a little feta, herbs and even a slice of ham aren’t going to break the calorie bank.

I got home from work at 5pm today and was feeling pretty hungry, too hungry to start the beef barely soup I had planned. I was very relieved to see the pizza crusts and got to work right away.

I started by preheating the oven to 425 degrees. Then I brushed the crust with white truffle oil followed by, tomato sauce, a sprinkle of oregano and basil herbs, 1 piece of ham chopped, 10 pieces of mini pepperoni (120 calories for 16 pieces), spinach, crumbled feta, a handful of skimmed mozarella cheese.

Once the oven dinged to let me know it was at temperature, I popped my pizza in and baked it for exactly 10 minutes after which I broiled it for 1 minute and a half.

And it’s that easy!

Other toppings I enjoy adding to pizza:

  • olives
  • fresh tomatoes
  • arugula
  • caramelized onions
  • mushrooms
  • green peppers
  • pineapple
  • pesto
  • chicken
  • prosciutto

You could even pre-make these, seal them and freeze them for a day when you’re feeling extra lazy.
