Blueberry season in British Columbia means these delicious antioxidant packed berries are everywhere from country road side stands to my local grocery store. I bought a basket to snack on at work but didn’t get quite through it. Instead of having them go bad in the fridge, I pulled out this recipe I hadn’t made in a while. It’s a fresh, tasty summer salad AND I get to use basil from my garden.
For the salad you will need:
Dressing Recipe:
In a food processor add
1/2 cup of blueberries
1 1/2 Tblsp white vinegar
2 Tblsp Olive Oil
4 basil leaves
1 tsp honey
pinch of salt
There’s something extra special in making your own dressing and the basil in this recipe really balances out the sweetness of the blueberry. Try this recipe at your next BBQ. You’re sure to impress your guests.
