Seth’s own Prawn Cesar Salad

During the week , as you well know, life gets pretty busy.  And as much as I love to cook, I tend to lean toward the non practical cooking side.  I’m more of a Sunday roast that takes 5 hours to make cook. I take great pleasure in the process from beginning to end; a stroll through Granville Island market for fresh ingredients amongst pyramids of local fruit and fish coming off the docks.  I actually watch entire movies on my laptop while prepping.  But unless you’re retired or just won the lotto max,  a quick and simple recipe is the most convenient for a weekday dinner and my boyfriend  is amazing at whipping up a lovely meal in under 30 minutes.

One of my favourite recipes he makes is this delicious yet simple Prawn Cesar Salad.  It literally takes about 10 minutes to prep and another 10 to cook the prawns.  I made it today for lunch and thought I’d share.

 

For the Prawns you will need:

1 bag peeled and deveined raw (and thawed) prawns

Toss the prawns in a bowl with anything you like – I did lemon juice, garlic, dill, seasoning and let it marinade for a few minutes while washing the lettuce and tomatoes.

For the Salad you will need: (serves 2-3)

Cherry Tomatoes

1 Romaine Lettuce washed and chopped

1-2 avocados

Croutons

Cesar salad dressing

Lemon wedges

Optional – I added pumpkin seeds because I had them and once in a while we add chopped cooked bacon when we’re feeling wild lol.

Parmesan makes a yummy topping too.

Add all your salad ingredients into separate bowls (however many people you will be serving) while you saute the prawns on medium heat with a little olive oil and butter.

Once the prawns are ready, you’re ready to eat!  Serve with a lemon wedge to squeeze over the salad, croutons and dressing.  Set a small bowl aside for the prawn tails.
